In the ten years since Zachary Zaitzeff opened his restaurant, he has experienced remarkable success. Zachary Zaitzeff says that much of his restaurant success can be credited to the commitment that he and his staff have maintained towards using only the freshest and most local ingredients.

"When we first opened the restaurant, we wanted to make sure that we were using it to support all of New York business. This is why we made the decision to serve only the freshest, most local and organic ingredients. All of our beef is grass fed and local, as are all of our dairy products. We also work with local producers to ensure that all of our bread and produce are made by people who act within the New York City economy."
