Founded by Kathleen and Sam Lavery in the 1970s, Delaware Provision Company started with the production of homemade Polish sausage and wholesale distribution of deli meats, cheeses, spices, dry goods and other provisions. It has since progressed into the esteemed catering company it is today. Delaware Provision Company is now owned and operated by the Lavery's nephew, William Hayes. Mr. Hayes began working for the family-owned business while in high school and soon discovered his love for culinary arts. He graduated magna cum laude from Delaware Technical & Community College in 2004 with an associate degree in hotel, restaurant and institution management, and went on to receive an associate degree in food service management and culinary arts from the same college in 2008. Today, he manages all operations of Delaware Provision Company, including production, sanitation, distribution, and logistics. He also utilizes his expertise in recipe preparation while cooking for catering events.

Mr. Hayes was featured in The News Journal of Delaware in September of 2007 and again in March of 2008 in articles titled "Delaware Provision Hits its 'Crazy' Time" and "Sausages are a Link to the Past: Meat Merchants Have the Polish Touch if Not the Polish Heritage." In addition, he was profiled in a 2007 article that appeared in Spark Magazine. Mr. Hayes has also been featured in Pro-Files Magazine and Cambridge Publishing's "Top 101 Industry Experts" book. His professional affiliations include the First State Chefs Association and the American Culinary Association. Looking toward the future, Mr. Hayes intends to expand his business by adding a second downstate location and continuing to utilize farmer's markets, social networking and business relationships.
