The salmon was recently added to Chef Point's menu to protest the proposed ban on salt in New York City restaurants. The bill was introduced by Assemblyman Felix Ortiz and would fine restaurants $1,000 for each salt violation.

Chef Point owners Franson and Paula Nwaeze were outraged when they heard of the bill, and decided to support their Big Apple counterparts by serving the salmon, which features salt prominently in its preparation.

"The salmon is cured with salt and smoked. We serve it sliced, with diced onions and tomatoes in creamy asiago sauce over fettuccini pasta," said Chef Franson. "It has a delicious flavor that could not be duplicated by shaking salt onto it at the table."

Ortiz claims that banning the use of salt in restaurants would give consumers more control over their health, but chefs and consumers alike are speaking out against government regulation of flavor. The group "My Food, My Choice" even has a petition on their web site that allows people to sign up to protest the inane legislation.

"I know this proposed bill only affects New York," said Paula Nwaeze. "But if it passes there, it could be just a matter of time before the government is telling Texans how much salt they can eat. We decided we should do something in protest before the government begins telling us we have to serve mandatory broccoli with every meal."
