Deerfields Bakery got its start 125 years ago when Adam Schmitt opened Schmitts Bakery, in Weisloch, Germany in 1886. Adam's son Carl immigrated to the United States and in 1911 opened a bakery in Chicago and named it "New York Bakery". Years later, Carl's son Henry took over the business and renamed it Schmitt's Bake Shop and expanded to several locations in the Chicago area.

Despite losing the Schmitt Bake Shop business in the 1960's from over expansion, Henry started over with the acquisition of the existing "Deerfield Bakery". Soon after, his three children, Kathi, Karl and Kurt, one by one, joined him in the family business. Over the next decades, Deerfield Bakery added two more locations, in Buffalo Grove and Schaumburg, and an "s" to its formal name making it "Deerfields Bakery". Today, Henry's grandson, Tim Schmitt, is the fifth generation family member to take the reins and manage the bakery.

Deerfields Bakery still holds true to the same tradition of quality that Adam Schmitt started so long ago. In this ever evolving world, Chicagoland residents continue to find comfort in Deerfields Bakery's creative baking and signature sweets for special occasions, or any occasion.
