First organized in 1998 by Wayne Francis and Orlando Satchell, an International award-winning Caribbean chef, this event was originally held just once a month, but its immediate popularity quickly prompted the hotel to host Caribbean evenings several times a month. This event has continued to generate full bookings each time and is often booked weeks and even months in advance.
Guests are treated to a lavish three-course buffet of around 40 items created under the direction of Colin West, the Caribbean Chef. The impressive spread brims with traditional foods evocative of the islands, complemented by refreshing cocktails and Caribbean beers. Guests are also invited to dance the limbo to the rhythms of a steel band and a DJ.
