First organized in 1998 by Wayne Francis and Orlando Satchell, an International award-winning Caribbean chef, this event was originally held just once a month, but its immediate popularity quickly prompted the hotel to host Caribbean evenings several times a month. This event has continued to generate full bookings each time and is often booked weeks and even months in advance.
Guests are treated to a lavish three-course buffet of around 40 items created under the direction of Colin West, the Caribbean Chef.
