Humboldt Distillery Organic Spiced Rum is distilled from domestically grown organic sugar cane and flavored with whole organic spices. It contains no artificial flavors or colors and is gluten free. Unlike the overpowering spice and artificial flavors found in some mass-produced brands, Humboldt Distillery's Organic Spiced Rum is modestly spiced with subtle hints of vanilla, spice and fruit, ideal for any cocktail recipe calling for rum. Humboldt Distillery Organic Spiced Rum is 80-proof (40% alcohol by volume) and available in 750-ml bottles at a suggested retail price of $22.99.

Humboldt Distillery is the first micro-distillery on the North Coast, and the only distillery in the region producing certified organic rum. Founded in 2012 and operated by Abe Stevens, a North Coast native who holds degrees in chemistry and biochemistry, Humboldt Distillery combines Abe's scientific mind with his passion for artisan food and beverage. The result is limited release, small-batch, and finely crafted organic vodka, organic spiced rum, and both pear and apple brandies all bearing the Humboldt Distillery name.

While apples may not be the first crop that comes to mind when thinking of Humboldt County, they accounted for much of the area's agricultural production in the early 1900's. There are still over 25 varieties of apples grown in the county today. We love using the fresh cider made from local apples by Clendenen's in our home town of Fortuna in this favorite holiday recipe. The 100 year-old company only produces seasonally and doesn't export outside the area, but you can substitute fresh, unfiltered apple juice from your local natural foods market.

6 c apple juice, preferably fresh and unfiltered
3 cinnamon sticks
12 whole cloves
6 whole allspice
1 1/2 cups Humboldt Distillery Certified Organic Spiced Rum
1/2 pint heavy whipping cream, whipped to very soft peaks and sweetened with 1 tablespoon sugar and Humboldt Distillery Certified Organic Spiced Rum to taste.

Preparation
Combine apple juice and whole spices in a saucepan and bring to a simmer. Remove from heat and let sit 30 minutes. To serve, reheat juice, then strain into heatproof mugs, dividing evenly. Add 1/4 cup rum to each and top with sweetened whipped cream.
