With 27 years of professional experience, seven of which were spent as manager of his own chocolate factory, Mr. Nelsen specializes in preparing fine, handcrafted chocolates, soups, sauces and pastries. As a chocolatier, he is in charge of creating baking and chocolate formulas and recipes for corporate events and other occasions, preparing wedding cakes, and maintaining the company website. A pastry chef by trade, Mr. Nelsen honed his skills as an apprentice to a master Danish baker. He began his career in family and fine dining as an event manager, eventually venturing into chocolate making after being inspired by the people he met on the job. He attributes his success to his perseverance, positive attitude and passion for what he does.
Previously, Mr. Nelsen worked at an assisted living complex, where he made chocolates for residents. He still volunteers his talents to a local school and various community organizations. His goals for the future include continuing to support his family with the business and further his wife's education in the medical field. He also plans to continue to make the best quality product at the most affordable price.
