Fire system maintenance includes checking to ensure fusible link line conduits are free of grease and that cables are positioned to properly set off the system in the event of a fire. Electrical interlocking also is inspected to make sure it is in place so that, in the event of a fire, it starts the exhaust fan, shuts off the Makeup Air Unit and shuts off electrical appliances, outlets and lights in and under the hood, Farazandeh said.
