    /24-7PressRelease/ - December 13, 2006 - We've always heard that milk is good for your bones, broccoli is good for your growth, and carrots are good for your eyes. It's true; certain nutrients in our food affect our bodies in different ways. Here are some recipes aimed at improving your vision.

Super Sight Salad

4 handfuls fresh spinach*
½ cup red cabbage, torn
4 green onions, sliced
1 clove fresh garlic, minced
1 avocado, sliced
10 baby carrots
Raspberry vinaigrette

In a large bowl, toss together spinach, red cabbage, green onions, and garlic. Separate mixture into serving dishes. Fan ½ avocado on top of each salad mixture, and surround with 5 baby carrots. Serve with raspberry vinaigrette. Makes two servings.

Sweet Potatoes and Eggs

One medium sweet potato
Seasoning salt (recipe follows)
6 eggs

Peel sweet potato. Cut in half length-wise and slice thinly. Deep fry at 365 degrees for about 10 minutes or until golden brown. Remove from oil onto a paper towel to drain and sprinkle immediately with seasoning salt to taste. Serve with eggs cooked any style. Makes two servings.

Seasoning salt
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
¼ tsp paprika
1/8 tsp cayenne

Citrus Baked Salmon
Salmon fillets
Orange juice
Lemmon juice
Fresh garlic minced or sliced
Fresh ground pepper
Butter

Preheat oven to 375 degrees. Mix together equal parts lemon juice and orange juice to make jus enough to cover salmon fillets. Place salmon fillets in a buttered casserole dish and pour juices over fillets. Top each fillet with ½ clove minced or sliced garlic and fresh ground pepper to taste. Cover and bake for 30 minutes. Uncover and finish baking until fish flakes easily with a fork. Remove salmon to a serving plate and pour off juices into a separate serving bowl. Try Pinot Noir as a great wine choice with this dish!

Broccoli Au Gratin

4 cups steamed broccoli
2 cups chicken broth or stock
2 tbs butter
2 tbs flour
2 tbs paprika
1 fresh jalapeño
2 tbs onion powder
½ - 1 cup parmesan cheese, shredded
4-6 oz Swiss cheese, grated
4-6 oz sharp cheddar, grated

Drain broccoli in a colander to reduce extra water content and set aside. Melt butter. Add flour to butter and cook for about 2 minutes. Add chicken broth, paprika, and onion powder. Remove stem, core and seeds from jalapeño, slice and add to broth. Simmer until reduced by half. Add parmesan and stir until melted. Set aside enough Swiss and cheddar to top. Add remaining Swiss and cheddar and stir until melted. Place broccoli in a glass baking dish and add sauce. Top with Swiss and cheddar that was set aside. Bake at 300 for 30 minutes. Switch to broil for 2 -3 minutes. Cool for 5 - 10 minutes before serving. Can be made 1 - 2 hours in advance and kept warm by simply turning off the oven and not removing.

Dark Chocolate and Berries
For an eye-healthy dessert alternative try melting dark chocolate in a double boiler and drizzle over equal parts fresh raspberries and blackberries!

*Due to the recent E. Coli outbreak you may want to substitute fresh spinach with romaine lettuce, arugula, or dandelion greens.
