Additionally, he serves as the co-founder of a nonprofit called CareResources, the largest provider of home healthcare in the state of Hawaii. At the start of his career, he joined the University of Hawaii in a variety of roles. Over the years, he has lent his expertise to Memorial Sloan-Kettering Cancer Center, the ACoS Commission on Cancer, and the Queen's Medical Center, in Honolulu. Since 2002, he has served as Chief of Surgery for the large VA Northern California Health Care System, and Professor of Clinical Surgery at U.C. Davis, in California.

A graduate of such prestigious institutions as Harvard and Yale, Dr. Hundahl holds a Bachelor of Arts in chemistry, as well as an MD. His professional affiliations have included the American College of Surgeons, the American Association for the Advancement of Science, the Pacific Coast Surgical Association, the International Gastric Cancer Association, and numerous others. Throughout his career, he has authored or co-authored over 60 journal articles and 18 book chapters.

Notably, Dr. Hundahl was a member of the team which developed the National Cancer Database. He has been recognized many times for his professional efforts, including the Hobart Keese Award from Yale University, a Best Presentation Award from the World Health Organization, the Nishi Award by the International Gastric Cancer Association, and the Joan Oettinger Memorial Award from U.C. Davis.
