Columbus-based fitness and nutrition trainer Jason Yun offers up a healthy and easy recipe for fat-burning nutrition. You can fix it in your slow cooker, let it cook all day, and come home to a healthy meal after work or school.
Spinach & Feta Stuffed Meatloaf
Ingredients:
2 lbs. ground beef (use something healthy such as 90% lean/10% fat)
2 large eggs
1 onion, chopped
2 cloves garlic, minced
½ cup pasta sauce (instead of ketchup)
2/3 cup oatmeal (instead of bread crumbs)
¼ cup mozzarella or parmesan cheese
3 tbsp. sun-dried tomatoes
¾ cup feta cheese
10 oz. spinach
In a large bowl, mix together the beef, eggs, onion, garlic, pasta sauce, oatmeal, and mozzarella or parmesan. Form the meat mixture into a rectangle, approximately 10 in. by 6 in.
In a smaller bowl, combine the sun-dried tomatoes and feta. Top the meatloaf with this mixture and spread the spinach on top of that. Fold the meatloaf over so the topping is encased and none is left showing. Top with about 2 tbsp. of additional pasta sauce.
Cook in the slow cooker for 8-10 hours on low or 4-6 hours on high.
