Tigh Na Mara's new Endless Tapas concept is a new offering from their Grotto Spa's Treetop Tapas and Grill. The concept was Hirsch's to start with, but was delivered with exquisite perfection by sous chef Rick Davidson.
"The idea of endless tapas came to me when I was in an endless sushi restaurant in New York and the concept of endless tapas, west coast style, seemed a perfect fit for us from both an excellence in service and cuisine standpoint," says Hirsch.
"The style of service really lends to the concept of 'social spa-ing', which is something that we introduced to Canada with the launch of 'Guilty Pleasures for Desperate Housewives' last year."
Davidson has taken culinary liberty with west coast fare from local producers, and produced a 29-item West Coast tapas menu unlike any on Vancouver Island. Davidson has crafted the delicacies into small portions, exquisitely presented and outdone only by their magnificent combination of flavours. Spend an afternoon sharing small bites and explore as many flavors as you can.
You might start out with the Grilled Pear and Stilton Blue Cheese Salad with Champagne and Pineapple Vinaigrette, followed by Baked Dungeness Crab Cakes with Mango Citrus Cream and Papaya Pineapple Relish topped off with a breathtaking Mascarpone Mousse, Layered with Fruit, and Chocolate Laced Cookie Crisps. You can keep exploring and digging deeper into the menu because the tapas offerings, traditionally served in smaller portions, are endless!
The experience is part of the ultimate in pampering perfection at the spa. It starts with a soak in the Grotto's stunning 2,500 square foot Mineral Bath - fed by a two-storey waterfall. Then spend some time in the beautifully appointed Relaxation Lounge, where you can relax in Vancouver Island hand-made and sourced driftwood and comfy leather furniture, enjoying an herbal tea or water, with some fresh fruit. Then it's off to explore the sumptuous Endless Tapas in the Treetop Tapas and Grill all the while in the comfort of your Chenille robe and sandals.
