When giving us the lowdown on The Marshal's legendary Phillip's Farm Summer Berry Shortcake, our host Sharon spoke of the "narrow two-week window where you can get all different berries within the same season."

The shortcake was made of a sweet sponge cake freshly baked by Three Monk's Bakery in Brooklyn, and drizzled with rhubarb syrup. It was topped with balsamic-infused whipped cream and berries from the local Union Square Greenmarket. It was, to say the least, completely out of this world.

Our crew at Venture was fairly new to the farm-to-table concept, but we were entirely impressed by The Marshal's dedication to using ingredients during peak season only, and sourcing them from only farms and local shops in New York City. Only a few were sourced from further out in New York State. "It's such a wonderful thing when you're in touch with the earth like that," Sharon told us. "Nowadays people are so divorced from what they eat." Noting the restaurant's namesake, she said it was a nod to the fact that "We're kind of in the Wild West with our food!"

The Marshal's most popular dish is their Wood Oven Roasted Meatloaf. The meat is provided by Arcadian Pastures, a sustainable New York farm that keeps a rare breed of pasture-bred hogs. Presently, the meatloaf is stuffed with Phillips Farm squash, carrots, local kale, onion gravy and mozzarella. Their mozzarella is sourced from a small dairy farm that processes its own milk on site. The meatloaf recipe is altered frequently, depending on what vegetables are in season at the time. This guarantees maximum flavor and freshness, and the difference is apparent with every bite.
