Sonja says," When I had my restaurants in Germany people would travel all across the country to buy my old Vienna apple strudel".
The German definition of Strudel means whirl which is why you will always see her strudel with many circular whirls in the dough layers. The strudel you find in America has no whirls in the dough and has nothing to do with how strudel is supposed to be made. Additionally, the dough of the strudel is supposed to be noodle dough and nothing else.
During the recent introduction of her apple strudel to San Jose area Sonja had every chef, restaurant owner, and caterer that sampled her apple strudel proclaiming," This is FANTASTIC apple strudel !"
