Naofumi Morita Named a Lifetime Achiever by Marquis Who's Who

Dr. Morita is a respected Japanese food scientist and former professor of Osaka Prefecture University, with over 42 years experience working in the agricultural industry. Although he is well known for patents in using gold ions for cancer prevention and remedy, his particular expertise is in cereal chemistry, food processing, phytochemistry, and pharmacology. Dr. Morita is currently working on a barley flour substitute for bread making in order to provide a better source of dietary fiber and beta-glucan. He was named one of the 2006 Top 100 Scientists and a recipient of the 2007 Da Vinci Diamond Award by the International Biographic Center.

Born in Tateshina in Kitasakugun Nagano, Japan, Dr. Morita is the son of Yoshikane Morita. He earned a PhD in agriculture from the Osaka Prefecture University in 1975. Dr. Morita initially worked as a research associate with Nara Medical University, returning to his alma mater in 1979. He lectured there from 1990 to 1996 and became a professor there until 2007. Since 2005, he has served as an academic advisor for Fudai Co. Ltd., and in 2007, he was named trustee of the Toyo College of Food Technology in Kawanishi, Japan.

At the second International Conference on Food Chemistry and Nutrition in 2017, Dr Morita showcased his work with various grains, cereals, and pseudo-cereals, pointing out the correlation between industrial processed grains and allergies in Japan. He also cited a recommendation initially given by NASA on the benefits of amaranth and quinoa over traditional cereal grains in a controlled ecological life support system. Dr. Morita is vice chief director for the Patentability-Based Practical Application of Wheat and Barley organization, a former editorial board member of the Japanese Society of Applied Glycoscience, and former director of Joint-Enterprise Corporation, Food Atelier: Love and Dream in Kobe, Japan. He is affiliated with the Japanese Society for Bread, the Bread Society of Japan, the NPO Providing Low Allergen Food, the Royal Australian Chemical Institute, the Japan Society of Bioscience, Biotechnology and Agrochemistry, the American Association of Cereal Chemists, the Japanese Society of Amaranthus and Quinoa, the Society of Practical Application of Domestic Wheats, the Japanese Society of Cereal Scientists, and the International Buckwheat Research Association.

For dedication to food science, Dr. Morita was selected for inclusion in numerous volumes of Who's Who in the World from 2009 to 2016. Dr. Morita enjoys fishing, gardening, and has three children.
