Let's go back to the year 1767. A man named Joseph Priestly had been credited with the discovery of oxygen and had now figured out a way to make carbonated water. After writing a paper about it, Priestly caught the interest of a man who began selling his carbonated water in 1783. This man's name was J.J. Schweppe. Up until this point, carbonated water could only be found in certain mineral springs, particularly in Germany. One of those springs was in a town called Seltzers. As you might be able to guess, this is how seltzer water got its name.
Schweppe found success with his company and to this day it continues to grow and prosper. In the mid-1800's, other German companies saw this success and wanted in on the action. Competitors began to buy entire springs in order to pull out the water, bottle it and sell it. Not long after that, the German government began to enforce strict regulations and standards to regulate the purity and safety of the water. Still to this day, mineral water has the most strict regulations out of any food item in Germany.
In the late 1800's, the love of seltzer began to spread to the United States largely due to Jewish immigrants from Germany. They established Jewish communities throughout New York City and small delivery businesses began delivering locally made carbonated water to them. It did not take long for this to catch on to other communities throughout New York City and the rest of the country.
There are many possible reasons why sparkling water quickly gained popularity in the United States. One theory is that the presence of carbon dioxide can trigger a very minor pain reaction, inducing a flow of endorphins. This is similar to why we enjoy spicy foods. Our brain can almost trick itself into pleasure by taking part in acts it sees as dangerous, but are not really dangerous at all.
