With more than 45 years of medical and research experience to his credit, Dr. Cohen has been a professor at the University of Nebraska Medical Center (UNMC) in the department of Pathology and Microbiology since 1981 and has been active as an adjunct professor of toxicologic pathology at the Medical School of Sao Paulo State University in Botucatu, Brazil, since 2010. He began his professional career as a staff pathologist at St. Vincent Hospital from 1975 to 1981 and associate professor of pathology at the University of Massachusetts Medical School from 1977 to 1981.

Continuing on his professional path, Dr. Cohen joined UNMC as a professor of pathology in 1981 and as professor of the Eppley Institute for Research in Cancer and Allied Diseases. He served as vice chair of the department of pathology and microbiology from 1981 to 1992 and as chair from 1992 to 2007. He was on the board of trustees for the International Life Sciences Institute (ILSI) (2007-16) and the ILSI Health and Environmental Sciences Institute (HESI) (2002-2017), board of scientific counselors of the National Toxicology Program (2002-4) and the National Institute of Environmental Health Sciences (2008-2013). He serves on the Science Advisory Board of the United States Environmental Protection Agency (2018-2020). Dr. Cohen is also on the Expert Panel of the Flavor and Extract Manufacturing Association (since 2002), has served on numerous national and international committees including the chair of a National Institutes of Health study section. He also has served on the National Comprehensive Cancer Network Bladder Cancer Working Group (1996-2007). He was visiting professor in the First Department of Pathology at Nagoya City University Graduate School of Medical Sciences in Japan (1976-7), and is an expert consultant to several companies.

Prior to the start of his professional career, Dr. Cohen pursued formal education at the University of Wisconsin-Madison, earning a Bachelor of Science in medical science, with honors, in 1967. He continued his studies at the university, obtaining a dual Doctor of Medicine and Doctor of Philosophy (experimental oncology) in 1972. Following his graduation from the university, he did a residency in pathology at St. Vincent Hospital in Worcester, Massachusetts (1972-5), and was board certified in anatomic and clinical pathology through the American Board of Pathology in 1976. He is an elected fellow of the Academy of Toxicological Sciences and the International Academy of Toxicologic Pathology.

A prolific writer, Dr. Cohen has contributed more than 400 articles to professional, peer reviewed journals and about 50 chapters in various books on pathology, toxicology, and carcinogenesis. Additionally, he has presented at numerous meetings, and has served as associate editor or on the editorial board of several science journals. To keep up with trends in his field, Dr. Cohen has served as a member of the American Association for Cancer Research since 1975, the Nebraska Association of Pathologists since 1982, the Society of Toxicology since 1986, the Society of Toxicologic Pathology since 1990, the International Academy of Toxicologic Pathology since 2003, and the American Association for the Advancement of Science since 2013, among other organizations.

In light of his exceptional undertakings, Dr. Cohen has received numerous awards and accolades related to his field. The University of Wisconsin Medical School presented him the Distinguished Alumnus Citation 1999 and the University of Nebraska bestowed him with the Outstanding Research in Creative Activity Award in 1990. His other honors include the Arnold J. Lehman Award from the Society of Toxicology, the George H. Scott Award from the Toxicology Forum, the Distinguished Scientist Award from the American College of Toxicology, Lifetime Achievement Award from the Society of Toxicologic Pathology, and the Merit Award from the Society of Toxicology. He has also been in the Best Doctors in America regional listing. Dr. Cohen was also selected for inclusion in the first edition of Who's Who in Science and Engineering and the 23rd edition of Who's Who in the Midwest, as well as several editions of Who's Who in America and Who's Who in Medicine and Healthcare.
