After serving as a lieutenant commander in the United States Navy, Mr. Manley continued a 38-year career in the food service industry. Beginning his career as the assistant food service director at the National Naval Medical Center in 1971, he also served as a food service director for the Annapolis Naval Hospital in 1972, the Naval Regional Medical Center in Orlando in 1975 and North Broward Hospital in Pompano Beach, Florida, in 1981. He owned Creative Food Concepts for catering and school food service, and managed the Longwood Village Inn (Winter Park, FL). He founded many organizations, including the Military Hospitality Alliance, Workaholic's International Network, Veteran's Support Network, Global Foodservice Institute and Foodservice Institute. He served as Chairman and then President of the Int'l Food Service Executives Assn. (IFSEA) from 1989 to 2008, and Chair-Elect from 2017 to current. He was Chairman of the Department of Labor Skill Standards Board for Hospitality & Tourism (4 years), was President of the Cornell Hotel Society, Orlando (4 years) a board member of Mid-Florida Technical Food Service program.
As an expert in his field, Mr. Manley has authored the Restaurant Manager's Guide and was editor of the "HACCP Implementation Manual" and "Food Safety 101." (Pearson). He self-published "The 5-Second Rule & Other Kitchen Do's and Don'ts."
In 2003, Mr. Manley created the annual Military Culinary Competition and Enlisted Aide of the Year Award. He also created the Pompano Square Mall Walkers, the Taste of South Florida and annual Christmas party for Big Brothers/Big Sisters. His memberships have included IFSEA, Cornell Hotel Society, Cornell Club, Florida Restaurant & Lodging Association, American Society of Health Care Food Service Administrators, Naval Training Center Officer's Club Board President.
