Dr. William Eugene Artz has excelled as a food science educator for more than three decades.

An accomplished listee, Dr. Artz celebrates more than three decades of experience in his profession, and has been noted for several achievements, his leadership qualities, and for his credentials and successes accrued in his field. Supported by a wealth of professional experience, Dr. Artz has excelled as a food science educator for more than three decades. Prior to the beginning of his career, he pursued a formal education at the University of Wisconsin in Madison, earning a Bachelor of Science in natural science in 1973. A year later in 1973, he obtained a Bachelor of Agriculture from the aforementioned institution. After a brief time in industry, Dr. Artz returned to graduate school and concluded his academic efforts at Washington State University, from which he graduated with a Master of Science in food science in 1978 and a Doctor of Philosophy in food science (with a minor in Analytical Chemistry) in early 1984.

After six months as a post-doctoral research scientist with Prof. Edward G. Schanus, Dr. Artz began his career as an assistant professor at the University of Illinois in 1984. During his career at the University of Illinois, he also served as a consultant in the field of food oil processing and analysis. He subsequently taught at the University of Illinois in Urbana/Champaign for more than 30 years, eventually retiring as an associate professor emeritus in 2012. He continued teaching on-line graduate courses upon retirement until 2018. During his career, he was responsible for developing and teaching senior and graduate level courses that included - Fat Substitutes; Chemistry, Technology and Applications, and courses in food processing, food oil chemistry, and fermented and distilled beverages. Utilizing his expertise in food science and microbiology, Dr. Artz has authored myriad articles for scientific journals and several book chapters.

In a career filled with numerous highlights, Dr. Artz has enjoyed the administrative roles he has held, his experiences in the American food and oil chemistry industry, and teaching at the University of Illinois. During his graduate studies he was very fortunate to have access to a wealth of great advisors and professors who were excellent teachers, researchers and mentors. He benefited substantially from the guidance of several excellent faculty at Washington State University (Prof. A. Larry Branen, Prof. A. Keith Dunker and Prof. Edward G. Schanus to name a few) and Prof. Joe von Elbe at the University of Wisconsin, although he attributes much of his success to the encouragement and guidance of Prof. Barry G. Swanson, an Emeritus Regents Professor at Washington State University, who directed his MS and PhD research programs. For Prof. Artz's accomplishments in the field, he was selected for inclusion the 22nd edition of Who's Who in the Midwest. To remain aware of current trends, Dr. Artz found that his affiliation with the Institute of Food Technologists, the American Chemical Society, and AOCS, previously known as the American Oil Chemists' Society was very useful, in particular, the scientific journals they published and the scientific meetings their organized for their members.
