A respected business owner, Mr. Kimball began his career as a mechanic before realizing his deep connection for food and the Cajun culture. In 2007, he spearheaded his now incredibly successful Cajun food inspired restaurant Cajun Works Inc. in Krotz Springs, Louisiana. He takes pride in the foundation he built at Cajun Works Inc., offering authentic Cajun food and a casual, sit-down eating experience. Cajun Works Inc. also offers food in a handheld fashion for customers on-the-go such as chicken balls and fold over meat pies.
In today's fast-paced world, Mr. Kimball encourages his customers to slow down and enjoy the restaurant experience with the swamp décor in a camp-style atmosphere. Since the grand opening of Cajun Works Inc. in Krotz Springs, he has since opened additional locations in Louisiana and Texas. Inspired by his father, who owned a business for most of his life, Mr. Kimball's aspirations to become a successful business owner in his own right, eventually taking the jump to open his own restaurant.
Mr. Kimball believes that Cajun culture has been overlooked for centuries and is fading away. Although many people believe that Cajun culture is based out of New Orleans, LA, it is actually a culture deriving from the Atchafalaya Basin, a swamp in Louisiana where Mr. Kimball was raised. In an effort to get closer to the history of the food about which he is so passionate, he decided to trace his ancestry which goes back 400 years to France. Mr. Kimball's 9th great-grandfather was one of the first to go to Quebec, Canada to explore for the kings of France and his 8th great-grandfather settled the first village in Quebec with 45 different families as the Acadian-Cajuns.
From 1986 to 1998, Mr. Kimball worked as a mechanic at Santa Marta Golf Course and an automobile technician at Gerry Lane Chevrolet in Baton Rouge, LA. In between those jobs, he served in the United States Navy from 1988 to 1992, at which time he was an aviation machinist AD2. Mr. Kimball was active as the owner of Kimball's Auto in Krotz Springs, LA, from 1998 to 2005.
Prior to opening his restaurant, Mr. Kimball had a life threatening brain tumor that was eventually removed. Cajun Works, Inc' mascot is an alligator named "Fraser," who is named after the neurosurgeon who removed it. Unfortunately, Dr. Fraser passed away at an early age. Mr. Kimball feels as though if it wasn't for Dr. Fraser, he would have never had the opportunity to pursue his restaurant aspirations.
Mr. Kimball is a member of the National Restaurant Association, Texas Restaurant Association, Louisiana Restaurant Association, the Better Business Bureau. The Cajun Works location in Breaux Bridge, LA, was recognized as the Best Cajun Restaurant four consecutive years.
