Having earned distinction as a chef and entrepreneur, Ms. Kayal has garnered a laudable reputation as the proprietor of Nabati, a raw vegan ice cream shop in Wynwood, Florida. The concept for Nabati began as a class project that she developed while studying at the Culinary Arts Academy, where she earned a Bachelor of Arts in 2016. Tasked with developing a product from scratch, Ms. Kayal created a vegan ice cream base, a product so new that she recalls having to explain to other chefs exactly what "vegan" meant.
Prior to opening Nabati in 2018, Ms. Kayal served as a kitchen intern at Clinique La Prairie, Switzerland, and the Frantzen Group in Sweden. She found success as a demi chef de partie at Grain Store in 2017, and a junior sous chef at Farmacy in London from 2017 until 2018. Ms. Kayal grew passionate about the Wynwood neighborhood of Miami while on vacation, and decided to relocate after realizing that there were no fully plant-based ice cream shops in the city.
In addition to her culinary arts degree, Ms. Kayal holds a Bachelor of Science in business sustainability from the University of Lausanne. She is passionate about reducing waste and environmental impact wherever possible, and operates Nabati as a plastic-free establishment, offering discounts for patrons who bring their own containers. Ms. Kayal is proud to be a female food and beverage entrepreneur and sole business operator under 30, and aspires to soon expand her brand so as to include ready-to-eat ice cream and frozen treats for distribution.
