Ms. Larson enjoyed an exemplary career as a clinical dietitian for Essentia Health Duluth for nearly four decades, starting in 1980 and retiring in 2019. She began her dietetic practice at the Lake City Nursing Home in Lake City, Minnesota, and the Pine Haven Nursing Home in Pine Island, Minnesota, where she provided her expertise as a consultant. Prior to becoming a dietitian, Ms. Larson was a food service supervisor for the Rochester State Hospital in Rochester, Minnesota.
An expert in physical medicine and rehabilitation, Ms. Larson's inspiration to work in health and nutrition stemmed from her family, who lived active, healthy lifestyles. Her mother was an especially wonderful cook, and often shared her food science knowledge with her as she came of age. Ms. Larson drew equal inspiration from several effective mentors throughout her career, which included co-workers and supervisors.
Ms. Larson has enjoyed a distinguished record of leadership in her community for more than a decade. Highly active with the Lester Park United Methodist Church, she served as the church mission chairperson between 1997 and 2007, as the council secretary from 2008 to 2018, and a staff parish council chairperson from 2016 until 2018. Among other roles, Ms. Larson is a former President of Altrusa International of Duluth, Minnesota, a position she held between 2006 - 2008.
A graduate of the University of Minnesota in Saint Paul, Ms. Larson obtained a Bachelor of Science in dietetics and community nutrition in 1976. She is a registered dietitian, and is licensed by the state of Minnesota. Ms. Larson notably received a traineeship after college graduation, which ultimately enabled her to successfully pass her registration examination and begin practicing as a dietitian.
Aligned with several prominent industry related organizations, Ms. Larson has maintained her involvement with the Academy of Nutrition and Dietetics and the Minnesota Academy of Nutrition and Dietetics. She is also a member of the Medical Nutrition Practice Group of the Academy of Nutrition and Dietetics. Celebrated for her success, Ms. Larson twice received the Most Valuable Player Award from the Head of the Lakes District Dietetic Association in 2000 and 2010. She also received a Distinguished Member Award from the Dietitians in Physical Medicine and Rehabilitation Practice Group for 2004 - 2005 and an Outstanding Member Award for 2007 - 2008. Additionally, Ms. Larson was bestowed with an Award of Valor from the Minnesota Dietetic Association in 2010.
