Dr. Torres attributes her success to her passion to improve the lives of others. Having grown up in Colombia, she was inspired to pursue a career in medicine after witnessing numerous health issues, including malnutrition and diarrhea among children. She pursued a formal education at the Colegio Mayor de Nuestra Señora del Rosario, from which she earned a Doctor of Medicine in 1981. Soon thereafter, Dr. Torres completed a pediatric residency at the Colegio Mayor De Nuestra Señora del Rosario and a fellowship in pediatric gastroenterology hepatology, and nutrition at the Creighton Nebraska University Health Foundation.

From 1991 to 1993, Dr. Torres served as a pediatric attending physician at the Police Clinic in Bogotá, Colombia. She subsequently garnered experience as a pediatric attending physician at the CAFAM Clinic associated with The University Javeriana for five years. She eventually relocated to the United States of America and began to focus her practice in Pediatric Gastroenterology, managing patients with intestinal failure and patients pre-/post-liver and small bowel transplant. From 2002 to 2007, Dr. Torres excelled as the medical director of the Intestinal Rehabilitation Program at the University Nebraska Medical Center.

Dr. Torres joined the Division of Gastroenterology-Hepatology at Children's National Medical Center – George Washington University DC as the creator and Director of the Intestinal Rehabilitation Program (IRP) in 2007. Her care has resulted in exceptional results among intestinal failure patients, specifically those patients with short bowel syndrome (SBS) parenteral nutrition dependent. During the past 14 years, among her patients with SBS, there has been a demonstrated survivability rate of 98.7%. Additionally 99% of her SBS patients saw a resolution of cholestasis/liver disease (with a median time to normalized bilirubin of 9.5 weeks) and 85% of the SBS patients have achieved enteral nutrition autonomy, weaning from their parenteral nutrition over a median time of 5 months after beginning the IRP with non-transplant treatment.

Her outcomes have been published in the Journal of Pediatric Gastroenterology and Nutrition and in the Journal of Parenteral and Enteral Nutrition. Moreover, she has been the recipient of an award for the abstract on outcomes of the extreme short bowel syndrome (Paris) and was distinguished as one of the best pediatric plenum of the year at the Hospital Infantil Lorencita Villegas De Santos. Dr. Torres is also a member of the American Society of Transplantation, the North American Society of Pediatric Gastroenterology and Nutrition, the American Gastroenterology Association, the International Pediatric Transplantation Association and the Intestinal Transplant Association.
