He subsequently obtained a Doctor of Philosophy in microbiology from the University of California Davis in 1987. Moreover, Dr. Merker remains aware of developments in his field by his affiliation with the American Society for Microbiology.
Dr. Merker began his career conducting research in microbiology for various universities before finding success as a Supervisory Consumer Safety Officer in the Division of Petition Review at the U.S. Food and Drug Administration from 2007 to 2010. From 1991 to 2020, he additionally served as lead of the Plant Food Biotechnology Team at the U.S. Food and Drug Administration. Since 2020, he has excelled as an independent consultant in the food biotechnical industry. Dr. Merker is also in training to volunteer for the Smithsonian National Museum of Natural History's Outbreak Exhibit.
Among the highlights of his career, Dr. Merker fondly recalls his appointment as a microbiology reviewer on the first submission on probiotics to the U.S. Food and Drug Administration, for which he was integral in helping authorize the addition of microbes to infant formula. Another moment of note is his role in improving the consultation program on genetically engineered plants. Notably, Mr. Merker was responsible for the consultations on genetically-engineered potatoes and apples upon their completion.
