Lu Taqueria started as a food truck that was custom-made by its owners; currently, Ms. Batista Pena and her collaborators are working to establish an accompanying brick-and-mortar restaurant as well. Their food, popularly acclaimed for the passion that goes into its creation, has received high accolades, earning nominations for Best Food Truck and Best Mexican Food. Raised in the Dominican Republic, Ms. Batista Pena holds an associate degree in culinary arts from Johnson & Wales University and a certificate in bookkeeping. Likewise, she completed an internship at Brenners Park-Hotel & Spa in Germany. While her success in the culinary world brings her great satisfaction, she is most proud of her ability to balance life as a single mom to her two kids, Lia Castillo Batista and Amelia Nunez Batista, with her professional and academic endeavors.
