Before embarking on his entrepreneurial journey, Mr. Bianchi spent 20 years honing his skills at Pollo Campero, the renowned Guatemalan restaurant chain. His journey with the company began in 1998, while he was still studying industrial engineering in college. Over the years, he took on progressively senior roles—including facility management, area manager, and franchise business consultant—positions that laid the foundation for his future leadership in the brand's U.S. expansion. After relocating to Dallas, Texas in 2007, he was appointed director of operations services, where he oversaw key aspects of operational excellence, customer experience and innovation. During his tenure, Mr. Bianchi played a pivotal role in opening 100 new restaurants, gaining deep expertise in labor and construction regulations as well as cross-border industry practices. These experiences would later prove invaluable as he transitioned toward pursuing his dream of opening his own restaurant.

Mr. Bianchi's equally accomplished educational endeavors have played a key role in his success. He holds an Executive Master of Business Administration from Pontificia Universidad Católica de Chile, completed in 2003. Additionally, he earned a degree in industrial engineering from Universidad del Valle de Guatemala in 1999. His education was vital in his early professional roles, when he focused on various construction and restaurant facility tasks involving food trucks and restaurant equipment fabrication.

To expand his knowledge and qualifications, Mr. Bianchi successfully obtained a certificate in culinary arts and chef training from the International Culinary School at the Art Institute in 2018. This achievement marked a significant turning point in his career, allowing him to seamlessly blend his engineering background with culinary creativity. His ability to apply various operations principles to restaurant management has distinguished him as an expert in the field.

Mr. Bianchi has demonstrated resilience and determination in every area of his life. His experience as an Ironman triathlete instilled discipline and perseverance, qualities that have been crucial in navigating challenges within the restaurant industry. He attributes much of his success to the unwavering support of his friends and family, particularly his wife, children and parents who have stood by him during both triumphs and trials.

Beyond his professional achievements, Mr. Bianchi is passionate about do-it-yourself home projects and woodworking. He is currently working on plans for a wooden sailboat, a testament to his creativity and hands-on approach to life. In the coming years, he envisions expanding The Empanada Cookhouse into airports and stadiums across the United States, introducing Americans to the delightful flavors of empanadas. With aspirations of growing his concept into a network of restaurants nationwide, he remains committed to sharing the unique taste of empanadas with diverse audiences.
