Prior to joining UCHealth, Ms. Nelson was an active member of the San Diego Dietetic Association, where she contributed to the advancement of dietetic practices. She began her career on the back of her highly successful academic endeavors, which include a Bachelor of Science in dietetics from the University of Vermont in 1983 and a Master of Science in food science and nutrition from Colorado State University in 1988.

Ms. Nelson's journey is also marked by several certifications that underscore her dedication to continuous learning and excellence in her field. She became a registered dietitian early in her career and later achieved certification as a nutrition support clinician. In 2018, she was certified as a diabetes care and education specialist, further enhancing her ability to provide comprehensive care to patients with diabetes.

Happily married and a devoted mother of one son, Ms. Nelson cherishes time spent with her family and is deeply proud of their achievements. Her son achieved notable success as a state champion in the 300-meter hurdles during his senior year of high school, attended the University of Colorado on scholarship and is employed in the field of electrical engineering. Additionally, her husband has established himself as a prominent figure in the engineering realm. Her family provides her with great joy and fulfillment in all aspects of her life.

Outside of work, Ms. Nelson enjoys swimming, dancing, hiking and traveling, all of which provide a balance to her professional ambitions and reflect her commitment to maintaining a healthy lifestyle. Looking to the future, she plans to step back from her dietitian role while continuing to engage in meaningful work that allows for more leisure time. Her numerous contributions to the field of dietetics have left a lasting impact on her colleagues and patients alike and will continue to influence future generations of dietitians.
