Ms. Wolfson earned a Bachelor of Arts in Italian literature and political science from Trinity College and a Master of Science in nutrition education from American University. Since 2009, she has served as the principal and lead nutrition educator of You Are Because You Eat, where she launched the award-winning nutrition education program FoodLab. She collaborates with administrators at various institutions to conduct nutrition, culinary, and wellness workshops for participants of all ages. Ms. Wolfson has developed and taught over 25 different experiential curricula that integrate cooking, art, science, gastronomy, language arts, cultural history, and life skills. All are designed to develop food literacy and self-efficacy through critical thinking about food. Supported by a wealth of knowledge, in 2020 she penned her first book, "Vegetables for Breakfast from A to Z: Change Your Breakfast, Change Your Life." Additionally, Ms. Wolfson contributed to several books, including "Jewish Sages of Today," "Becoming a Bat Mitzvah" and "Art of Cigars."
After getting married at an advanced age, Ms. Wolfson wanted to start a family. Western medicine told her that she could not conceive her own child. Undeterred, she explored several non-invasive methods and alternative treatments to improve her chances of conceiving, including yoga, tai chi, and acupuncture. Similarly, she worked with macrobiotic counselor Denny Waxman to change her diet and lifestyle. At 44, she conceived her first child and then Ms. Wolfson attended Waxman's Strengthening Health Institute program and became certified as a macrobiotic counselor and chef. Her second child, born when she was 51, was a testament to the transformative power of her diet and lifestyle changes, particularly the introduction of vegetables for breakfast.
Before changing careers to become a certified macrobiotic educator and registered yoga teacher, Ms. Wolfson was a skilled editor for publications including Glamour, Parents, STYLE.com, Redbook, Seventeen, and Your Prom. In conjunction with her work, she contributes to her community through Adamah, synagogues, schools, and Jewish Community Centers. Ms. Wolfson received the Excellence in Innovation Award in Nutrition Education for the FoodLab Program in 2023 for her professional achievements.
Though hard work and dedication have brought her far in her career, Ms. Wolfson credits her success to her excellent mentors. She intends to write more books and expand the reach of her edible education programs to promote food literacy.
