Within less than two years, he established several dining concepts, including Carbonaro's, SobreMesa, Trattoria da Sofia, Aromi and Pizza by Aromi. He is recognized for his commitment to maintaining high standards of quality and consistency across all locations, particularly with the flagship quick service Italian restaurant, Carbonaro's, located on College Avenue near San Diego State University. This establishment allows customers to customize their meals with freshly made pasta and a variety of sauces and toppings, setting a new standard for fast-casual Italian cuisine.

The holding group continues to grow with plans to open additional restaurants across the United States and internationally. Mr. Carbonaro is actively pursuing opportunities in Europe. The success of his ventures is evident in the high volume of customers served daily as well as the positive reception he has received from local communities.

Mr. Carbonaro is also the owner of SobreMesa, a Latin American restaurant/lounge concept that reflects his passion for diverse culinary experiences. With construction ongoing, the 5,000-square-foot venue will feature live entertainment and a DJ, offering guests an immersive dining atmosphere inspired by the tradition of lingering over meals with friends and family.

Prior to his entrepreneurial achievements, Mr. Carbonaro gained valuable industry experience through a series of progressively responsible roles. He began his career in San Diego as a busboy before advancing to become a food runner and various service positions, with his dedication leading him to assistant manager and manager roles at local establishments. In 2020, he became the general manager of a large restaurant that achieved sales exceeding $1 million in a single month — a testament to his operational acumen and leadership skills.

Following his tenure as general manager, Mr. Carbonaro served as an operating partner for several restaurants, where he held equity stakes and contributed to their growth strategies. He then launched Aromi independently in La Mesa, where the establishment quickly became known for its authentic Italian cuisine and strong neighborhood presence throughout San Diego County. Building on this momentum, he opened a larger venue named Trattoria da Sofia in Kensington and subsequently leased Pizza by Aromi adjacent to Aromi.

Throughout his career, Mr. Carbonaro has prioritized learning from every role and challenge he encounters along the way. He credits his rise from entry level positions to ownership with perseverance, long hours and a willingness to invest in personal growth and continuous learning.

Reflecting on his journey thus far, Mr. Carbonaro attributes much of his success to the unwavering support of his family — his parents, brother Dario and cousins Mariano and Francesco— who have been integral partners in many business endeavors. Their encouragement provided stability during challenging times as he transitioned from his native Palermo, Italy, to San Diego and worked tirelessly to establish himself in the United States. His professional journey has also been shaped by collaborations with talented chefs and partners who share his commitment to quality. Constantly formulating new Italian cuisine concepts within his group, his Italian chefs ensure authenticity while the consulting chefs oversee standards at new ventures such as SobreMesa.

Mr. Carbonaro's civic engagement includes supporting Father Joe's Villages — which strives to end homelessness in San Diego — through charitable donations. Now established as a cornerstone of the community, he has been recognized for opening multiple popular restaurants and saw his entrepreneurial accomplishments featured in the San Diego Business Journal.

Looking toward the future, Mr. Carbonaro intends to further expand the reach of Carbonaro's both nationally and internationally with additional locations planned across the United States — including Los Angeles, Northern California and the East Coast — as well as continued growth in Europe.
