He is actively engaged with customers seven days a week, creating coffee drinks, developing daily specials and assisting with menu planning. Mr. Melassanos coordinates and supervises the overall flow of service and operations, adjusting orders and supplies based on seasonal demand and business patterns. He ensures smooth communication between the kitchen and service teams while running the entire operation efficiently and consistently.

Before his current role, Mr. Melassanos began his culinary journey at age 15 as a restaurant employee in Greece, quickly advancing to cook by age 15 and a half. While attending high school and college in the United States, he worked diligently in restaurant kitchens to finance his education. After earning his degrees, he purchased his first pizzeria, which he successfully operated for two years before starting a family. Together with his wife, he then acquired a 1950s-style diner that they managed for six years before selling it and opening DG Basil's in Brick, New Jersey, a previously closed restaurant they revitalized and operated for nearly 15 years.
Building on this foundation, Mr. Melassanos later acquired another restaurant and bar with an attached 300-seat banquet hall, which he managed for an additional 15 years. Following a brief one-year hiatus from the industry, he opened a BYOB Mediterranean-Greek–influenced restaurant in Eatontown, New Jersey, just before the COVID-19 pandemic. Despite significant challenges and an uncooperative landlord during this period, he persevered until he and his family purchased Honey Berry Cafe two and a half years later.
Mr. Melassanos is an active member of several industry-related organizations. He is affiliated with the Chamber of Commerce and is a past member of the Restaurant Association. Additionally, he served as vice president of Alpha Kappa Psi.
His academic background includes a Bachelor of Business Administration in marketing from Kean University in Union, New Jersey, earned in 1982. He also holds an associate's degree in restaurant management. To further enhance his expertise in branding within the hospitality sector, Mr. Melassanos completed the Neil Blumenthal on Branding certification through LinkedIn in 2016.
Mr. Melassanos attributes his professional achievements to his focused personality, drive and dedication, qualities that have enabled him to overcome numerous challenges throughout his career. Having been exposed to various temptations such as drugs, alcohol and gambling from an early age, particularly while working in bars and restaurants, he credits his discipline for avoiding these pitfalls.
His commitment extends beyond business endeavors; Mr. Melassanos supports his local Greek church through civic engagement.
Outside of his professional life, Mr. Melassanos enjoys spending time with his family, including two sons and grandchildren, and pursues interests such as cars (with a particular fondness for Porsches) and cooking. Looking ahead, he plans to acquire another restaurant and expand his business by opening an additional location nearby, where he can hire and train staff to take over management responsibilities eventually. Ultimately, Mr. Melassanos hopes to travel with his wife, known for her baking skills, especially throughout Europe, while enjoying more time with family and grandchildren.
