Ms. Allen initiated her career in 1980 after accepting the title of registered nurse at the (University of Pittsburgh Medical Center) Mercy Hospital. From 1986 through 1990, she concurrently served at Thomas Jefferson University Hospital, accumulating broad experience in nursing, particularly in cardiothoracic surgery, which laid the foundation for her transition into functional medicine. During remission from the clinical field of nursing in the hospital setting, she continued her caregiving role as a private duty personal care provider for several family members with cancer and disabilities for 18 years. In 2010, Ms. Allen excelled as a caregiver for Home Instead Senior Care, and from 2015 to 2016, she excelled as a front desk attendant at Peters Township Community Recreation Center. Between 2019 and 2021, Ms. Allen also built an effective freelance profile and thrived as a chef and natural foods specialty cook under the moniker CarbSmartCook and "Food Relationship" and Pain Coach. Ms. Allen's approach of mindful eating is to introduce a broad assortment of plant based foods to balance gut microbiome, heal and repair damaged gut linings to support and strengthen the immune system to live a more enjoyable life.
Ms. Allen's educational background includes an associate degree in registered nursing from Mercy Hospital School of Nursing, where she accepted a financial scholarship and proudly finished the program in 1982. Her industry credentials are extensive and include being an American National Standards Institute accredited prometric food safety professional, and she holds Serv Safe Certification in kitchen management as a food safety and food handling manager supporting the need to practice food hygiene for both the food industry and the general public. She pursued continuing education credits, with UPMC, Harvard, and AHNA in the field of lifestyle medicine and plant based cooking and was certified as a functional nutrition counselor as a graduate in 2023 via Andrea Nakayama's FBS Fx Nutrition Alliance and continued her devotion to become recognized as a Functional Nutrition Licensed Practitioner (FNLP). Additionally, in 2019, Ms. Allen was named a functional medicine certified health coach through the Functional Medicine Coaching Academy Inc. as the foundation to begin her profession.
After 20 years of private research in the field of endocrinology and pancreatic disease, while recovering from serious health challenges, Diane published the book, "It Might Be Your Pancreas: Pancreatitis Awareness and Natural Digestive Recovery." She is also a member of several industry-related organizations including the American Holistic Nurses Association, the Teaching Kitchen Collaborative, the Learning Disabilities Association, the National Alliance on Mental Illness, the Academy of Lifestyle Medicine and the Institute of Functional Medicine.
Ms. Allen attributes her success to personal motivation and learning from others who have overcome challenges; moreover, she credits her Italian heritage for instilling in her a strong work ethic, embracing a healthy amount of humor into life circumstances, and a focus on enjoying life. She believes success involves knowing oneself, clarifying determined goals and defining what success means both personally and professionally. She is also committed to serving her community; her civic involvement includes participation with the Girl Scouts of America, and Ms. Allen was recognized with a leadership award for her volunteerism with the Boy Scouts of America.
Outside of her professional life, Ms. Allen is a devoted mother of four children and grandmother and enjoys dancing, yoga, mindful nature walks, singing, creating new plant-based recipes, learning new languages, swimming, and experimenting with new adventures. Looking toward the future, she will maintain her focus on changing how treatments are delivered to people and aims to increase her public speaking engagements and food demonstrations to help individuals make better food choices. Additionally, Ms. Allen recently published (2025) cookbook for veterans titled "Make Your Breakfast" was inspired by Admiral McRaven's motivational book "Make Your Bed."
