St. Patrick's Day Party Food

With St. Patrick's Day just around the corner it's time to start thinking about a festive Irish party. But, what's a festive party without festive food and drink? Whether it's a small party with just a few guests or a large party, here are some ideas. The Kauffman family gather, all three generations. Invite your guests to wear the traditional green and get ready for a real Irish kiss.

Traditional Irish Food

Ireland is a green island surrounded by water and the Irish enjoy fish and shell fish every day. Start your party with some luscious Kent Island Crab Cakes on a Bed of Spinach. Order from www.kentislandcrabcakes.com.
For the main course, Corned beef and cabbage is a very Irish/American dish and for a party, it conjures up thoughts of Ireland so go ahead and serve it. Add some buttermilk scones and you're good to go.

Green Food

A spinach salad makes a nice naturally green accompaniment. If you want to go completely crazy, you can add green food coloring to Kent Island Crab Dip to start your feast.
Pick up some Green Shamrock Shaped Cookies from the bakery or simply make cut-and-bake sugar cookies in rounds and top with green sugar.

Green Drinks and Traditional Irish Beer

To wash down the green food go with Guinness, or your favorite Irish beer. Serve the kids green Koolaid.

Dessert

Grandmother Kauffman's Seven Layer Jello with Green Stripes
For St. Patrick's Day, start and finish with a green layer of jello, then add orange, yellow and white layers in between. Grandmother Kauffman makes this dish with her beautiful grandchildren. They like to stir and pour, and sneak little tastes as they go along.

Ingredients

- 4 (3 ounce) packages Jello gelatin, each a DIFFERENT color, I usually use red, green, orange and yellow) .
- 4 cups boiling water
- 2 1/4 cups cold water
- 1 pint sour cream
- 2 (1/4 ounce) envelopes plain Knox gelatin
- 2 cups half and half or 4% milk
- 1 cup sugar
- 2 teaspoons vanilla

Directions

Dissolve 1 package Jello in 1 cup boiling water; add 1/2 cup cold water. Pour into a 9x12x2 inch pan and put into the refrigerator to set until firm.

Bring 2 cups of milk or cream to a boil, mix in a cup of sugar until sugar is dissolved; dissolve 2 envelopes of Knox gelatin in 1/4 cup of cold water and add to mixture; add 2 cups sour cream, 2 teaspoons vanilla until blended.

When mixture is fairly cool, pour 1-1/2 cups on top of first Jello layer; return pan to refrigerator until white layer is firm and completely set.

Mix next package of Jello as indicated in step 1; pour onto completely set white layer; return to refrigerator and allow to set completely.

Again add 1-1/2 cups white mixture and return to refrigerator and allow to set completely.

Mix third package of Jello as indicated in step 1; pour onto completely set white layer; return to refrigerator and allow to set completely.

Add remaining white mixture; return to refrigerator and allow to set completely.

Mix the last package of Jello as indicated in step 1 and pour onto completely set white layer; return to refrigerator and allow to set until firm. Preferably, overnight.

Cut into domino sized pieces and serve.
