As a professor of Howard University, a position she held for 30 years prior to her retirement, Dr. Enid M. Knight was primarily responsible for teaching students majoring in nutrition. She became involved in her profession because of her desire to teach the benefits of nutrition, and she attributes her success to her hard work and the support she received from her mentors.
Dr. Knight received her Doctorate from Cornell University in 1977, her Master's Degree in Nutritional Sciences in 1971, and her Bachelor's Degree in Nutritional Sciences from North Carolina Agriculture and Technical State University in 1969.
