Harvard Faculty Club Chef Heads for Aggieland - Traditions Club, Home of Texas A&M Golf, Hires Michael Brentana for New Clubhouse

The elegant Harvard University faculty and alumni club in Cambridge, MA, is a long way from Bryan. But Chef Michael Brentana says he is happy to return to Texas to continue his career.



    HOUSTON, TX, October 27, 2010 /24-7PressRelease/ -- Traditions Club, the private club and community and home to the Texas A&M University golf teams, has hired Executive Chef Michael A. Brentana. He comes from The Harvard Faculty Club and before that spent about ten years in Texas with the Adolphus Hotel in Dallas and the Driskill Hotel in Austin.

Spencer Clements, managing partner for Traditions Club, said the year-long search for the right chef took him to Houston then all the way to Cambridge, MA.

"Brentana's ten years at the elegant private club for Harvard University faculty and alumni prepares him for our new 25,000-square-foot clubhouse complex," said Clements. "He established culinary excellence, attracted new members and earned the club's reputation as a top dining and private event venue. It has become one of the most sought-after venues in Cambridge for dining and for weddings and special events. That is exactly what we anticipate for Traditions Club."

The first of the four-building complex in the Bryan golf community will open next month featuring two dining rooms, a banquet room and wine room with private wine lockers and a "Chef's Table" that seats 14.

Brentana's culinary education includes the Culinary Institute of America, Hyde Park, NY, and Secchia Institute for Culinary Education, Grand Rapids, MI. He has a strong background in menu planning and recipe development.

At the Harvard Club, Brentana was heralded for his international cuisine--A Taste of Spain, a Taste of North Africa, a Taste of Italy...a different prix fixe meal every month, and the Boston Herald featured his Lobster Bisque in its Food pages. "But my signature dish was Banana Bread Pudding with caramel sauce...members stood in line for it," Brentana said.

The new Traditions Club chef has moved to Bryan with his wife Pamela and two young daughters. He says Texas was home to him for nearly ten years and he is happy to continue his career here. "In 1999, I was part of the culinary team that re-opened the classic Driskill Hotel in Austin following a major renovation," Brentana said.

Traditions Club will open Nov. 20 following the A&M-Nebraska home game in College Station and will be serving the Club's first Thanksgiving meals on Nov. 25. Traditions Club is a private country club community with a Jack Nicklaus Design golf course at the center of more than 1,000 acres of rolling hills. Traditions is located in the heart of The Research Valley and near the popular George Bush Presidential Library.
