Dr. Eugenia Malone Zallen is a retired professor and has been a dean, tenured professor, hospital dietitian, and consultant and is executive vice president of Malone Group International Consultants.

Dr. Zallen is a retired professor and has been a dean, tenured professor, hospital dietitian, and consultant and is executive vice president of Malone Group International Consultants in Auburn, Alabama since 1989 when she retired from university life. Serving on the faculty at Auburn University, the University of Maryland, the University of Oklahoma, and East Carolina University, she has also authored or co-authored/edited several books including "Oklahoma Diet Manual" in 1979, "Quantity Food Production" in 1984 and "Sanitation and Safety" in 1984. "Ideas Plus Dollars: Research Methodology and Funding", co-authored with her husband has been used internationally by researchers and as a text book.-since first published in 1976. She has multiple articles in professional journals.

Originally studying chemistry in college, Dr. Zallen quickly changed majors by the end of her freshman year so that she could interact more with people. Becoming a dietetic major, she graduated from Auburn University with a Bachelor of Science in 1953. She completed her dietetic internship at Duke University Medical Center. She later attended Purdue University, where she achieved a Master of Science in 1960, and the University of Tennessee, where she attained a Doctor of Philosophy in food science in 1974.

Upon completing her dietetic internship at Duke, she became an associate administrative dietitian in 1954 at Duke University Medical Center. In 1957, she took a position as assistant chief dietitian at Emory University Hospital, Atlanta until 1958 when she entered graduate school at Purdue University. Entering academia, Dr. Zallen was hired by her alma mater, Auburn University and began a successful career in higher education. In addition to holding a faculty position at the universities listed previously, she served as Director, School of Home Economics, University of Oklahoma and Dean, School of Home Economics, East Carolina University. She also lent her expertise as a visiting professor at the University of Hawaii, Manoa and had served as a consultant to the Georgia Department of Education. She served as consultant to the ZTA National Housing Corporation, Indianapolis in 1992 and has served as advisor to seven collegiate chapters of Zeta Tau Alpha.

On the national level, Dr. Zallen served as president of the Food Service Systems Management Education Council. In North Carolina, she was president of the North Carolina Council of Women's Organizations. On the local level, she has been a volunteer educator for the Alabama Camp for Diabetic Children in Tallapoosa County and volunteer consultant for the Georgia Baptist Children's Emergency Shelter. In Auburn, she has served as president of the Home Economists in Home and Community, as a member of the Auburn University Dietetics program advisory council and is a founding member of the Auburn University Women's Philanthropy Board. She is a past member of the Institute of Food Technology and is active member of the Academy of Nutrition and Dietetics (formerly American Dietetics Association} and is a member of Phi Kappa Phi, Society of Sigma Xi, and Kappa Omicron Nu honor societies.

Throughout her career, Dr. Zallen has been the recipient of several awards. The awards include Outstanding Alumni of College of Human Science, Auburn University as well as recognition as a Distinguished Woman Graduate at 100 years of Women at Auburn; Gold Achievement Lifetime Achievement Award and "Old Master' Award from Purdue University; an Outstanding Graduate at Anniversary of Home Economics at University of Tennessee; Outstanding North Carolina Dietitian; 1988 Promotion of Research Award and Outstanding Home Economist from North Carolina Home Economics Association; and 1996 Distinguished Service Award from the Georgia Dietetics Association. A celebrated Marquis listee, she has been featured in the 24th and 25th editions of Who's Who in the South and Southwest and the 25th edition of Who's Who of American Women.
