Backed by a wealth of professional experience in the food industry, cooking has been a calling for Mr. Castan since the age of 14. In 1970, he notably graduated from the Culinary School of Marseilles, France. That same year, Mr. Castan also completed coursework at the National Conservatory of Arts and Crafts in Paris.

Born and raised in Provence, in southeastern France, Mr. Castan always fostered a deep appreciation for fresh produce and meat. He would frequently help his mother and grandmother in the kitchen. The day he was allowed to bake a cake by himself, Mr. Castan knew a career in food was in his future. He started learning his craft from renowned chefs of 2 and 3 Michelin star restaurants in different regions of France before moving to the USA.

The executive chef at various prestigious hotels and restaurants across the United States, Mr. Castan has excelled at the Hilton Anaheim in California, where he is responsible for the entire culinary department, since 2015. From 2006 to 2015, he worked at the Saint Regis Hotel in Dana Point, California. Mr. Castan previously found success at Starwood Hotels & Resorts Worldwide Inc. from 2006 to 2013 and at the Sofitel Chicago Water Tower from 2002 to 2006. He also successfully opened the Ritz Carlton in Pasadena, CA as an Executive Chef.

He was elected Vice Conseiller Culinaire for the Chaine des Rotisseurs in 2004 . A member of the Culinary Academy of France (ACF) and the Maitre Cuisiniers de France (MCF), Mr. Castan actively volunteers with Chef's Table, Habitat for Humanity, Juvenile Diabetes Foundation, cancer research organizations, homeless organizations, and many more. The MCF notably presented him with the Chef of the Year Award 2018 for his expertise in creating trendy haute cuisine, mentoring young cooks, and his volunteering efforts.
