For more than four decades, Dr. Anderson has dedicated his career to the study of nutritional causes and management of obesity and diabetes. The son of a deacon and a nurse, he came of age surrounded by examples of service to others, and by the age of 13, he felt a divine calling to pursue a career in medicine. Dr. Anderson holds a Bachelor of Science from West Virginia University, and earned a Doctor of Medicine at Northwestern University in 1961, where his initial interest in diabetes care began to develop. He would spend the next several years completing his internship and residency at the Presbyterian Medical Center of Denver, Colorado, and at the Mayo Foundation for Medical Education and Research. Dr. Anderson was bestowed with an additional Master of Science from the Mayo Foundation for Medical Education and Research in 1965.

From 1965 until 1968, Dr. Anderson served his country to the rank of a captain in the U.S. Army, where he worked with influential nutrition researcher Dr. Robert Herman, whom he credits with teaching him life-changing clinical research skills. After his honorable discharge from the military, he became an assistant professor of medicine at the University of California San Francisco, where he would teach until 1973. Since 1973, he has served as a professor of medicine and clinical nutrition at the University of Kentucky College of Medicine, for which he is the founding president of the HCF Nutrition Research Foundation. Among Dr. Anderson's career highlights are his work on the creation of a ten-bed Veterans Affairs hospital ward at the University of Kentucky, and the establishment of the Obesity Research Network, a team of 20 top obesity researchers who contributed to more than 100 studies as a group.

Dr. Anderson has been extensively published in professional journals, has served on the editorial boards of publications such as Vegetarian Nutrition, Diabetes Self-Management and Prevention Magazine, and currently acts as a reviewer for a dozen major medical journals worldwide. He is the author of more than 15 patient-centered lifestyle guidebooks, including "Diabetes: A Practical Guide to Healthy Living," and "The Simple Diet: A Doctor's Science-Based Plan." Dr. Anderson's recent research interests include dietary management techniques for symptoms of Alzheimer's disease.

As one of the leading voices in modern clinical nutrition, Dr. Anderson is a fellow of the American College of Physicians, the American College of Nutrition and the American Society for Clinical Nutrition. He is the former chairperson of the board of trustees of Georgetown College, and has donated his time as a volunteer medical provider for the Salvation Army Clinic and the Mission Lexington Medical Clinic. Dr. Anderson is an ordained deacon of the Baptist Church, and remains active in his faith community as a Sunday school teacher, missionary and supporter of community outreach by financial tithing.
