His responsibilities include ordering supplies, managing cleaning protocols, maintaining kitchens and linens, monitoring both front-of-house and back-of-house operations and ensuring that all facilities are pristine each morning. Mr. Baer is also responsible for payroll oversight, conducting daily meetings with team members to ensure seamless operations, identifying equipment needs and placing orders to maintain optimal inventory levels.
Prior to his current role, Mr. Baer was executive steward at Caesars Entertainment Corporation from 2011 to 2016. In this capacity, he managed large-scale food and beverage operations across multiple venues, focusing on maintaining high standards of cleanliness and efficiency. For the preceding two years, he held the position of general manager at Crackers & Co. Cafe.
Earlier in his career, Mr. Baer worked with Fleming's, where his contributions earned him a place on the wine list and set him on a path toward becoming a wine sommelier. Ultimately, he chose to specialize as a bourbon sommelier. Throughout his professional journey, he has also had the opportunity to work alongside renowned celebrity chefs, such as Gordon Ramsay, Giada De Laurentiis and Guy Fieri. These experiences were both inspiring and formative, offering him unique insights into the culinary world and elevating his passion for excellence in hospitality.
Mr. Baer's educational background includes earning a diploma from Camelback High School in Phoenix in 1990. He has continued to advance his knowledge through several certifications essential to his field, such as a food handlers card, ServSafe manager card, 10 hours OSHA certification and bourbon sommelier credentials.
The values instilled by Mr. Baer's father—emphasizing hard work, smart work and personal integrity—have played a significant role in shaping his approach to leadership and professional growth. Beginning his journey in the food and beverage industry at about nine years old by working summers at a mom-and-pop restaurant, he developed a deep understanding of every aspect of restaurant operations. His experience spans front-of-house service, back-of-house management, chef duties and bartending roles.
When economic conditions declined in Arizona in 2006, Mr. Baer was introduced to the steward profession through an opportunity with Gordon Ramsay in Las Vegas—a role unfamiliar to him at the time due to its rarity in Arizona establishments. Demonstrating initiative and adaptability, he quickly learned the intricacies of steward operations while working at Paris Las Vegas for five years before joining Red Rock Station Casinos. His dedication has been recognized through several awards, including supervisor of the quarter at Red Rock Station Casinos in 2021 and supervisor of the year at Bally's.
Beyond his professional responsibilities, Mr. Baer is actively involved in civic initiatives focused on supporting local communities. He has contributed as a food preparation worker, helping local schoolchildren by bringing lunches to schools, and has participated with Three Square Food Bank to address food insecurity. In his free time, he enjoys cooking and continues to refine his skills as a bourbon sommelier outside of work. He is the proud father of one daughter who is married to a military officer and is pursuing a career as a veterinarian.
Looking ahead, Mr. Baer aspires to continue growing within Red Rock Station Casinos by building on his valuable experience with the organization. His goal is to advance into roles such as food and beverage assistant director or another position that aligns with the company's vision for his talents.
