Prior to launching Kilroy Public House, Mr. Malonson became the owner of Sous Chef LLC in 2021. Since its inception, he has grown this full-service catering company into a nearly $2 million enterprise. The Sous Chef specializes in personalized catering for weddings and corporate events, often incorporating clients' cherished family recipes into custom menus.

Mr. Malonson's approach emphasizes relationship-building and staff development; many individuals he has mentored have advanced to executive chef roles or succeeded in other fields. He is particularly proud of these enduring professional connections and the positive impact he has had on others. Although he hesitates to label himself a chef due to his lack of formal culinary training, his achievements have been recognized with several chef awards.

In addition to his business ventures, Mr. Malonson founded TTT Outreach, also known as To the Table, in 2023. This privately funded initiative addresses food insecurity in Arkansas by providing meals to local families and offering conversation starters designed to foster family bonding during mealtime. Through TTT Outreach, he demonstrates a commitment to community service and social responsibility.

Mr. Malonson's educational background includes coursework in communications and business management. While he all but completed eight credit hours toward his degree and completed nearly all requirements, he ultimately found his calling in the food service industry by chance rather than design. He credits much of his success to the dedicated individuals who have worked alongside him throughout his career, emphasizing that surrounding himself with talented coworkers, mentors and staff has been instrumental in achieving his goals.

Mr. Malonson's civic engagement extends beyond TTT Outreach through broad involvement with other community-minded organizations. Over the course of his career, he has received six awards recognizing his contributions and excellence within the community as well as the culinary field.

Born in Wichita Falls, Mr. Malonson values time spent with his twin brother and three children. Looking ahead, he intends to establish systems that provide greater flexibility, allowing him to spend more time with family and friends while supporting his staff in doing the same. Professionally, he plans to open another remote Sous Chef location and partner with additional Kilroy Public House venues, focusing on continued growth and collaboration within the industry.
