From 2018 to 2026, Mr. Ghalayini served as regional director of operations at Strategic Dining Services, a boutique consulting firm specializing in corporate dining structures for independent senior living communities. These communities often lacked dedicated culinary leadership and instead relied on Strategic Dining Services for support to establish robust culinary frameworks. During his tenure, he played a pivotal role in supporting Ciel Senior Living as it expanded from two communities in 2020 to more than 20 by 2026. After Compass Group acquired Strategic Dining Services, many legacy contracts ended as the industry shifted away from personalized service. Recognizing Mr. Ghalayini's expertise and longstanding relationship with their organization, Ciel Senior Living invited him to join their team directly as vice president of culinary.

Earlier in his career, from 2009 to 2017, Mr. Ghalayini served as executive chef at Florida Hospital Memorial Medical Center and Florida Hospital Oceanside. There, he transformed the perception of "hospital food" to incorporate ala-minute room service style ordering/preparation for the 300+ beds and became the preferred outsourced catering venue throughout Volusia and Flagler Counties. His responsibilities included overseeing daily kitchen operations and ensuring high-quality food delivery across diverse venues.

From 2006 to 2008, Mr. Ghalayini operated as chef and owner of Upper Crust Cafe, where he gained valuable entrepreneurial experience managing all aspects of a culinary business. Before that, he was executive chef at Morrison Management Specialists from 2003 to 2006, further developing his leadership abilities and deepening his understanding of food service management.

Throughout his career, Mr. Ghalayini has been committed to transforming culinary programs across various environments — from hospitals to hotels and golf courses — consistently advancing from sous chef to executive chef and eventually dining director roles.
